This month we’ve got a rich curry influenced by the Moghuls whose refined cuisine was intricate and expensive to prepare. This was due in part to their use of costly spices such as cinnamon and cardamon which were added liberally to impart a delicate and sophisticated fragrance. We’re serving this flavoursome curry with some slightly sweetened peshwari naans which are stuffed with coconut, almond and raisins. The breads are surprisingly easy to make and taste far better than shop bought! Also on the side is a simple spinach dish, a rich chilli garlic chutney along with a cucumber, mint and coriander raita.

  • 600g diced chicken (thighs are best)
  • 2 onions
  • Fresh ginger
  • 8 cloves of garlic
  • ½ cucumber
  • 400g spinach (fresh or frozen)
  • 25g bunch of coriander
  • 130ml milk (any type)
  • 25g butter (plus extra for buttering the naans)
  • 75ml cream (any type)
  • 300g natural yogurt (full fat is best)
  • 25g raisins, sultanas, dates or dried apricots
  • 50g ground almonds
  • 25g desiccated coconut
  • 30g sugar
  • 2 tbsp tomato puree
  • 1 tbsp vinegar (white wine or cider vinegar is best)
  • 2 tsp dried yeast (a standard-size sachet)
  • 300g plain flour or bread flour (plus extra for rolling)
  • Rice to serve
