  • 1 onion
  • 2 cloves of garlic
  • 2 beetroot (or 200g ready-cooked not in vinegar)
  • 75g pine nuts or flaked almonds

Loved the colour from the beetroot and texture from the pine nuts. Will definitely try with the beans and rice next time as well as the salsa
