Mother's Day Cinnamon Roast Chicken

Special occasions call for a special meal and we've a real treat in store for you this Mother’s day with a Persian-inspired roast chicken dish. Cinnamon is a key spice in Persian cooking and here we've combined it with fragrant ground coriander, cumin and cardamon to create an aromatic and moreish roast chicken rub, with the rice cooked in the same tray so that it soaks up all the infused juices. The roast is served with garlicky greens, a cool and fragrant saffron yogurt and a fresh fattoush salad with chunks of crispy baked pitta bread. We round off the meal with indulgent, gently spiced chocolate pots and cardamon shortbread for dessert!

  • 150ml natural yogurt (full fat is best)
  • 60g butter
  • 210ml good quality olive oil
  • 2 tbsp vinegar (white wine or cider vinegar is best)
  • 65g plain flour
  • 300g basmati or standard long grain rice
  • 25g ground almonds
  • 100g dark chocolate
  • 110g sugar
  • 2 pitta breads
  • 150g pitted olives (optional)

Just boring, no fragrance from spices, no flavour. Tasted like normal roast chicken and greasy rice. Salad felt gritty, greasy dressing and again no aromatic noted from spice. Choc pots nice and orangey. No idea what spice was added as nothing there and I wish I'd ground my own cardamom pods. No fragrance even when cooking. I did check with rest of family in case my nose had gone on strike. But no. Perhaps it was because I made it for hubby's birthday instead of m others day. So disappointed as I'd been looking forward to it all day.

Absolutely loved this, mild but still plenty of flavour. The rice was to die for. The water to rice ratio however was completely off I had to add about two times that water as first time I took it out, thinking it was finished, the rice was still uncooked and the liquid all gone so that threw off the timings a bit. The cardamom shortbreads were incredibly more-ish as well

We cooked this for mothers day and it was very much enjoyed by everyone, it's not the strongest of dishes and that was appreciated by a lot of the family, it was a nice twist on a typical roast dinner. I'm definitely going to be buying this again.

Fabulous meal, which we saved for Easter Sunday! And it didn't disappoint! Mild but complex flavours which worked really well! The rice ratios worked fine for us, very tasty! We really enjoyed this meal. The rice was amazingly soft and tasty, and the chicken delicious. I also thought the salad was really tangy. I have the same spicebox to cook again. A real family pleaser.

Made this over Easter weekend. Loved the flavour combinations of the chicken, rice, salad and garlic greens. Will definitely make again. We had enough leftover for lunch and the flavour was improved the next day

Very succulent chicken and loved the Fattoush and saffron yoghurt. We felt as if it didn’t need the rice and greens. The chocolate pot was very yummy and we made this with milk chocolate as husband isn’t a fan of dark chocolate but it was really good lovely fresh orange hint. The shortbread was the best I have ever had and I will definitely be make this again. There was enough for seconds the following day!
