Here we’re substituting with mushrooms and lentils for a delicious dish that the whole family can enjoy.

Shopping List
  • 500g mushrooms (any type) - finely chopped
  • 1 large onion - roughly chopped
  • 150g peas (fresh or frozen)
  • 4 cloves of garlic - finely chopped
  • 2 tomatoes - finely chopped
  • 1-2 green chillies - finely chopped (seeds removed if you prefer less heat)
  • 25g butter  
  • 2 tbsp tomato puree
  • 250g ready-cooked beluga or puy lentils

Not enough mushrooms so added some parsnip and a little spinach. Used baby tomatoes for eye appeal. Served with onion & cucumber Raita and lemon rice. This was a free sample but will be cooked again, there is no doubt.
