Nepali Momos and Dal Bhat
Spicerer Maisie lived in Kathmandu in Nepal for 10 years and a recent trip back there reignited her love of momos, a type of filled dumpling and the most popular street food of the region. The word momo comes from a Chinese word meaning steamed bread, the dough is simply made from flour, water and oil and encases a mixture of mince, onion and fragrant spices. Momos are always served with a momo achar (or pickle) made from tomatoes, toasted sesame and timut pepper - a spice reminiscent of Sichuan pepper and used in most Nepali cooking. For the main event we have a Nepali staple, dal bhat or dal with rice which is served at every meal including breakfast!

- 250g chicken, lamb or beef mince
- 1 large onion
- 25g bunch of coriander
- 6 cloves of garlic
- Fresh ginger
- 6 tomatoes
- 1 small cauliflower
- 1 large carrot
- ½ cucumber
- 3 green chillies
- 1 lemon
- 25g butter
- 250g ready-cooked beluga or puy lentils
- 150g plain flour or bread flour (plus extra for rolling)
- Rice to serve

I never thought I'd be able to cook steamed buns but the Momos were so easy to make and delicious! The cauliflower was my favourite part of this dish. A mild curry but add in the green chilli pickle and wooomf! there's the heat!!

There is an awful lot to do and the result was bitter and didn’t have the flavour I was looking for. You win some, you lose some.

A lot of work for little reward! What a faff this meal is to make with so many steps and techniques required. The only bit that was any good were the momos, but the rest of it I would have happily binned. The dahl was like brown sludge and tasted similar to that, whilst the green chilli pickle was rocket fuel hot. I like spice, but not that much. As for the cauliflower tarkari, give it the last rites and move on. Carrot and Cucumber salad, not very exciting... A severe disappointment with nearly 3 hours of my life wasted.

Having been to Nepal and tasted the delights of Momos I was excited to make these. We really loved them, they tasted so authentic and I may order another box. Just would like a vegetarian version although the meat was not overpowering.

Great recipe and the Momos were fab - the dhal was great too (I did cook for longer than the recipe stated as I prefer it quite thick) and loved the chilli kick from the green chilli pickle!
