This curry originates from Madras (now Chennai) in the south of India - it’s both fiery and tangy, and has real depth of flavour from the use of darkly toasted cumin, coriander and mustard.

Kashmiri chilli, teja chilli, toasted coriander, toasted cumin, turmeric, toasted brown mustard, cinnamon, green cardamon, curry leaves, tamarind (tamarind, starch), fenugreek leaf
- 500g diced chicken OR cauliflower
- 1 medium onion
- 2 cloves of garlic
- ½ lemon
- 20g butter
- 1 tbsp sugar
- 400g tin of tomatoes or tomato passata
- Rice and yogurt for 4 to serve
