Shopping List
  • 500g diced chicken (thighs are best)
  • 150g shallots or 1 medium red onion - roughly chopped
  • 3 cloves of garlic - roughly chopped 
  • Fresh ginger - roughly chopped to make 2 tbsp
  • 2 lemongrass stalks - bashed with a rolling pin then cut into 3cm lengths
  • 1 lime - zested and halved for juicing
  • 400ml full fat coconut milk
  • 2 tsp sugar

Zesty creamy curry easy to make and the kitchen smelled amazing. Definitely better than a Saturday night take away.

Yum we love the delicious aromas from this recipe and the sauce looks so rich and creamy, well done!
