Shopping List
  • 226g paneer cheese
  • 200g spinach (fresh or frozen)
  • 4 tomatoes
  • 1 onion
  • 2 cloves of garlic
  • 300ml milk (any type)
  • 2 eggs (any size)
  • 150g plain flour or gluten-free alternative
  • 2 tbsp vinegar (white wine or cider vinegar is best)
  • 2 tbsp sugar

  • Large lidded pan
  • Small saucepan
  • Large non-stick frying pan

We made this instead of the usual sweet pancakes for pancake day and it was absolutely delicious. A really easy and fairly quick recipe and the flavours worked so well - savoury pancakes, smooth cheese and spinach and the tomato salsa was really sweet and had a nice kick. We almost had the recipe for 4 between 2 of us but we made less pancake batter and squirrelled a portion of the spinach paneer for lunch the next day. Would definitely make again.
