  • ½ small red onion - very finely chopped
  • 10g bunch of coriander - finely chopped
  • 250g plain flour (plus extra for rolling)
  • 100ml full fat coconut milk
  • 2 tbsp desiccated coconut

This Roti was the perfect accompaniment to the Ceylon Chicken, South Indian Coconut Rice and Coconut Sambol. It was quite easy to make too.

Fantastic replication of a Sri Lankan classic Roti, brought back a lot of memories of those Trinco diners! I tried it with half wholewheat and half plain flour which didn'ttake anything away. Perfect for mopping up a Mango Fish Curry!

We think this pol roti looks perfect - happy spicing!
