A favourite meal of spicerer Faduma (whose mum gave us the recipe!), biryani (or surbiyaan) is an aromatic rice dish served across the Arabian Peninsula - including Somalia and Yemen. The dish includes xawaash (pronounced hawash), a blend of cinnamon, cumin, turmeric and other spices widely used in Somali cooking.

The biryani is served here with an irresistible tamarind and date chutney (called shidni), as well as a green chilli and coriander sauce known as bizbaz. To finish the meal there’s green beans cooked with berbere - a chilli spice blend used throughout the horn of Africa - and a refreshing salad.

XAWAASH: Toasted cumin, toasted coriander, black pepper, cinnamon, cardamon, toasted cloves, turmeric

WHOLE SPICES: Bay leaf, green cardamon, cloves

TURMERIC.

SHIDNI CHUTNEY BLEND: Tamarind (tamarind, starch), green chilli flakes, coriander, green bell pepper flakes

SALAD BLEND: Toasted cumin, garlic, coriander leaf

BIZBAZ SPICES: Green chilli flakes, garlic, coriander leaf, green bell pepper flakes

BERBERE: Cardamon, allspice, fenugreek, cinnamon, black pepper, ajowan, chilli, cloves, ginger, coriander, paprika

  • 600g diced lamb
  • 2 medium onions
  • 4 cloves of garlic
  • 8 tomatoes 
  • 300g potatoes 
  • 1 green pepper 
  • 300g green beans
  • 20g bunch of coriander - 
  • 1 lemon
  • 300g basmati or standard long grain rice (not easy cook)
  • 40g pitted dates or raisins 
  • A pinch of sugar

Fantastic idea, well executed and constantly reinventing themselves. The recipes are imaginative and so well laid out that it's a combination of being foolproof while still giving you such a feeling of accomplishment when the delicious dishes are ready.
