Sri Lanka is known for the fragrance and colour of its cuisine, with the key ingredients being rice, coconut and spices including cinnamon and plenty of chilli. Coconuts grow abundantly on this tropical island - no Sri Lankan meal would be complete without their addition! Here we have a rich, complex and slightly sour pork curry alongside wattaka, a sweet pumpkin curry.

On the side are an onion and chilli relish known as lunu miris and a coconut chutney flavoured with mint. Finally we’ve got pol roti (flatbreads made with coconut, onion and coriander) which are great for scooping up all the other dishes!

  • 600g diced pork
  • ½ pumpkin or squash (about 500g prepared weight)
  • 2 red onions
  • 4 cloves of garlic
  • Fresh ginger - finely chopped to make 1 tbsp
  • 200g spinach or chard
  • 10g bunch of coriander
  • 1 lime
  • 400ml full fat coconut milk
  • 50g desiccated coconut
  • 300g basmati or standard long grain rice (not easy cook)
  • 250g plain flour plus extra for rolling out the breads
  • A big pinch of sugar
