To begin this meal we've got fish cutlets - essentially spicy fish cakes - served with a refreshing coconut chutney (pol sambol) and a traditional chilli sauce known as lunu miris. For the main course we've got Sri Lanka's answer to beef stew - a legacy of the European presence on the island. Cinnamon and mustard seeds are two spices that are key to the cooking of Sri Lanka and both appear here, flavouring the rich gravy the beef is cooked in. Once the beef is sealed off with the spices, it can be left bubbling away for a couple of hours creating delicious smells in your kitchen - the perfect meal for a cold winter’s evening or even a spicy alternative to a Sunday lunch!

Whole Spices: lemongrass, curry leaf, cinnamon
Lunu Miris Spices: mild chilli flakes, chilli, Kashmiri chilli, cumin
Pol Sambol Spices: green bell pepper, coriander
Mallung Spices: brown MUSTARD, mild chilli flakes, curry leaf, garlic, cumin

Shopping List
  • 800g diced beef
  • 300g floury potatoes
  • 3 medium red onions
  • 2 cloves of garlic
  • Fresh ginger
  • 200g kale
  • 1 tomato
  • 1 lemon
  • 1 egg (any size)
  • 30g desiccated coconut
  • ½ tsp sugar
  • 160g tin of tuna, mackerel or sardine fillets
  • 100g breadcrumbs (Japanese panko are best) or gluten free alternative
  • Rice to serve
  • Oil for frying (sunflower or vegetable oil is best)

Made the Beef Smore following the instructions but found there was nowhere near enough liquid, kept topping it up but no real rich gravy at the end. 300ml of water in total for 2 hrs gentle cooking just isn't enough. Spices give a good flavour but not enough liquid :(
