Suadero Beef Tacos with Salsa Mexicana
Suadero is a huge favourite in Mexico City, and this slow-cooked beef dish makes a meltingly tender taco filling. Brisket is the best cut for flavour, but any diced stewing or braising beef will also work really well. It’s layered up with some fresh salsa Mexicana to cut through the richness of the beef and smoky chipotle mayocrema to add a bit of heat!

- 800g diced beef
- 1 large onion
- 2 cloves of garlic
- 2 tomatoes
- 25g bunch of coriander
- 1 lime
- 1 avocado (optional)
- 75g sour cream
- 75g mayonnaise (or use an extra 75g sour cream)
- 8 mini tortillas or wraps (10-12cm diameter is perfect)
- Black beans and/or rice to serve
