It’s served with jollof rice, a dish found throughout West Africa and thought to be the origin of the Cajun dish jambalaya.

Spices Included
  • Herb Blend: thyme, bay, white pepper, onion, paprika, basil, black pepper, coriander leaf
  • Suya Blend: black pepper, Sichuan pepper, garlic, ginger, smoked paprika, habanero chilli, cayenne chilli, nutmeg, thyme, bay, white poppy, onion
  • Jollof Blend: paprika, annatto, turmeric, coriander, allspice, cumin, thyme, bay, garlic, onion

  • 500g diced chicken (thighs are best)
  • 2 red onions
  • 1 red pepper
  • 3 tomatoes
  • 1 lemon
  • 30g breadcrumbs or use plain crackers
  • 1 tbsp tomato puree
  • 75g peanuts (roasted and salted are fine)
  • 300g long grain or basmati rice
  • Hot sauce to serve (optional)
