Ramen is one of Japan's favourite dishes, found in tiny, informal restaurants all over the country. Some ramen masters spend years perfecting their recipe, making small adjustments everyday to create that perfect bowl of noodles, broth and toppings! Here we've got a version known as tantan ramen (tantanmen for short) which is based on dan dan noodles, a spicy mince dish from the Sichuan province of China.
