Our recipe developer Alice visited the city of Chiang Mai in the north of Thailand where she picked up some hot tips from cooking teacher Vannee - who also showed her how to prepare this hang lay curry. Traditionally made with pork belly, it’s also known as Burmese curry due to the addition of Burmese curry powder. It’s tangy from the use of tamarind, with pickled garlic, ginger and peanuts added in at the end for both flavour and texture. On the side there’s a zingy aubergine salad, a simple vegetable stir fry and a fiery chilli and tomato relish.

  • 800g diced pork (pork belly is best) or used tinned jackfruit in water for a veg version (following the same cooking instructions)
  • 300g pack of mixed stir-fry veg (or equivalent of sliced peppers, carrots, cabbage etc)
  • 2 aubergines
  • 200g shallots or 1 large red onion
  • 3 cloves of garlic
  • Fresh ginger
  • ½ cucumber
  • 3 tomatoes
  • 25g bunch of coriander
  • 1 lime
  • 55g sugar
  • 50g peanuts (roasted and salted are fine)
  • 4 tbsp fish or soy sauce or gluten-free alternative
  • 100ml vinegar (white wine or cider vinegar is best)
  • Oil for frying (sunflower or vegetable oil is best)
  • Rice to serve

Made a lower calorie option of this yesterday evening and it was exceptionally tasty. Air fried instead of deep frying the aubergine, substituted chicken thighs for the pork belly and used sweetener instead of sugar and wholemeal noodles instead of rice. Outstanding and a definite keeper. Sorry no pics as it vanished took quickly.

The best curry yet!! Great flavours, good amount of spice. Will definitely be making this again. My butcher also gave me the rind from the pork belly so we had an added extra of crackling, was beautiful.

Very very good curry. The sides worked well, enjoyed the chilli relish especially. Next time will leave the aubergine out as it’s not my favourite. For a first time curry chef like myself I’d say it’s a good challenge!

This is a meal with a mixture of different flavours from both the curry and the aubergine salad. I would definately recommend this dish and make it a gain.

Easy to follow recipe, interesting mix of flavours with the aubergine salad the star of the show, simply can’t imagine how hot the relish would have been with all the birds eye chillies, we used 2 plus some of the loose seeds and it was perfect for our delicate mouths!

Fantastic well spiced curry with sides I'd never thought of! Tasted absolutely fantastic and make a perfect lunchtime leftover for work! Definitely need to be more risky with the birds eye chilli next time and fire it up

Great flavours, all, but perhaps a bit of an eclectic mix of dishes all together? Curry was beautiful and rich. Method was more frantic and intense than others I've tried, but worth it. Timings are pretty accurate. Time spent on the prep and organising is a must! A great experience - thank you!

Lovely!! Noone in our house likes aubergine but we all loved the aubergine salad and the pork was a lovely change from our usual. The chilli paste meant we could all have our curry the way we liked it. Great

The best one of all those we've had. Swapped aubergine for mushrooms for personal preference, loved all the dishes. Full of taste and texture and simple to prepare.

Mouthwateringly tender pork curry, deep fried Aubergine salad, clearly the greatest way to cook aubergine, who would have guessed? Zingy chilli sauce cuts nicely through the mild curry and adds a good bit of heat. I would have just put slightly less fish sauce in the salad dressing next time, switch a little for soy. Really good.
