Massaman curry is an unusual curry Thai standards, using several different dried spices common to Indian cooking as well as fantastic fragrant Thai ingredients like lime leaves, lemongrass and galangal. It’s best served with plain rice, greens and a little bowl of nam prik on the side - a mix of lime juice, sugar, fish sauce and chilli used as a seasoning in place of salt and pepper on the table.

Chilli Flakes: chilli
Curry Spices: coriander, tamarind (tamarind and cornstarch), cumin, white pepper, cloves, mace, cassia, chilli, green cardamon, galangal, lemongrass, kaffir lime leaf, black cardamon
Whole Spices: Kashmiri chilli, cassia, kaffir lime, lemongrass

May contain traces of celery, mustard and sesame

  • 500g diced beef
  • 200g shallots
  • 500g new potatoes
  • 4 cloves of garlic
  • Fresh ginger
  • 1 lime
  • 3 tbsp fish sauce
  • 60g sugar
  • 50g peanuts (roasted and salted are fine)
  • 400ml full fat coconut milk
  • Rice and greens to serve

Our daughter gave me 2 kits for Christmas so each and every week we have cooking club with our 3 daughters and travel together using the wonderful recipes!
