  • 4 skin on sea bass, sea bream or mackerel fillets or use a block of tofu cut into 4 slices for a veg version
  • 3 cloves of garlic
  • ½ iceberg lettuce
  • 3 tomatoes
  • 1 cucumber
  • 1 yellow pepper
  • 25g bunch of coriander
  • 2 limes
  • 75g mayonnaise
  • 40g sugar
  • 200ml coconut milk (full fat is best)
  • 25g desiccated coconut
  • 325g self-raising flour (plus extra for rolling)
  • 750g oven chips (French fries are best) or make your own

This was absolutely sensational. So incredibly flavorful, and quite simple to make. Surprised at how addictive that cucumber chow is! Making it on Christmas Eve in the dead of a northeastern U.S. winter gave me such a jolt of tropical joy. Highly, highly recommended.

A really great recipe. I used Bass fillets and the marinade didn’t swamp the fine taste of the Bass. Prep is easy and the results are ace. Big tastes and hugely recommend!

Lockdown Carribean night! A good spice tempered by the minty sauce.

This dish was absolutely beautiful - we swapped the fish for chicken as one of the family doesn't like fish and it was still incredible. Everything was simple and so tasty. In particular the bread we will be making over and over. And all three sauces were an absolute hit! So glad to have a do-it-yourself recipe as we will be having this again and again!

It was fun to make and tasted delicious. Especially liked the spicy lime pepper sauce and tamarind sauce - they went great with the 'shark'. Cucumber chow could use a bit less seasoning.

The best birthday present ever! A subscription to 'World Kitchen Explorer'. We've been honing our kitchen skills during lockdown, and this was so much fun to make... and even more incredible to eat! Trinidad wasn't ever on our radar for recipes, but it definitely will after this: fragrant, sweet, sour, moreish and utterly delicious. You have to try it.

An excellent spiced take on a home comfort favourite. Fish and chips, with an extra bit of spice and flavour in every bite. Up there as my favourite spicebox and was also, one of the easiest to make!
