Trini Bake and 'Shark' with Cucumber Chow and Lime Pepper Sauce
Description | As the name suggests, in Trinidad this fried fish sandwich is traditionally cooked using blacktip shark, though other types of fish are often substituted. 'Bake' refers to the bread which makes up the sandwich, this can be a fried flatbread, or as here, coconut bake, a simple scone-like recipe that produces a fluffy, mild coconut flavoured bread. As with lots of Trini food it's really the condiments that make the meal - here we've got garlic sauce, tangy tamarind sauce and a fiery lime pepper sauce to choose from. Seasoned fries and a refreshing cucumber chow complete this summery spread. |

This was absolutely sensational. So incredibly flavorful, and quite simple to make. Surprised at how addictive that cucumber chow is! Making it on Christmas Eve in the dead of a northeastern U.S. winter gave me such a jolt of tropical joy. Highly, highly recommended.
Lovely recipe- we don't eat enough fish so this was a lovely treat and great new way to enjoy fish. Great way to experience new flavours!

A really great recipe. I used Bass fillets and the marinade didn’t swamp the fine taste of the Bass. Prep is easy and the results are ace. Big tastes and hugely recommend!

This dish was absolutely beautiful - we swapped the fish for chicken as one of the family doesn't like fish and it was still incredible. Everything was simple and so tasty. In particular the bread we will be making over and over. And all three sauces were an absolute hit! So glad to have a do-it-yourself recipe as we will be having this again and again!

It was fun to make and tasted delicious. Especially liked the spicy lime pepper sauce and tamarind sauce - they went great with the 'shark'. Cucumber chow could use a bit less seasoning.

The best birthday present ever! A subscription to 'World Kitchen Explorer'. We've been honing our kitchen skills during lockdown, and this was so much fun to make... and even more incredible to eat! Trinidad wasn't ever on our radar for recipes, but it definitely will after this: fragrant, sweet, sour, moreish and utterly delicious. You have to try it.

An excellent spiced take on a home comfort favourite. Fish and chips, with an extra bit of spice and flavour in every bite. Up there as my favourite spicebox and was also, one of the easiest to make!
