Fried chicken is one of Trinidad’s favourite foods, and there are shops all round the island showcasing their own special Trini Fried Chicken (or TFC!). The diverse culinary influences there and unusual spicing make for a perfect fusion, taking this takeaway treat to another level! The chicken is dusted in spices then coated in a marinade called green seasoning (a staple of Trini cooking) before being coated in spiced flour and finally fried to really pack in the Trini flavours. It’s served here with seasoned French fries, sweet brown stew gravy, a baked bean style spiced chickpea curry, coleslaw based on the famous Trini ‘mother-in-law’ salad and a fiery hot sauce.

  • 8 chicken thighs or drumsticks on the bone (or a mixture of the 2) (skinless)
  • ¼ white or red cabbage
  • 1 large carrot
  • 1 onion
  • 10g bunch of coriander
  • 2 limes
  • 20g tomato puree
  • 400g tin of chickpeas
  • 1 tbsp soy sauce (any type)
  • 180g self-raising flour
  • 50g cornflour
  • 1 chicken stock cube
  • 2 tsp sugar
  • Frozen french fries for 4 to serve (or make your own!)
  • Oil for frying (sunflower or vegetable oil is best)

Made this Trini Fried Chicken. It was a lot of work and not one of your easiest kits. I am pleased it actually looked like the recipe card, it is not for a quick dinner, but for those who like a challenge. Taste nice, loved the Trini Coleslaw. Nice to try a dish we wouldn’t usually go for and pleased I pulled it off. Go me!!!!

This was genuinely delightful, I enjoyed every part of this meal and I’m buying it again because it was so absolutely delicious! Crispy tasty chicken, the gravy was superb, the hot sauce cut right through the oil of the chicken, the chickpea curry was top notch, and the salad was tangy and refreshing!
