  • 4 large chicken thighs on the bone - skin removed if you prefer
  • 250g floury potatoes - peeled and cut into large chunks
  • 2 bunches of spring onions - thinly sliced
  • 2 tomatoes - roughly chopped
  • 1 green chilli - roughly chopped (seeds removed if you prefer less heat)
  • 3 cloves of garlic - roughly chopped
  • 10g bunch of coriander or parsley - roughly chopped
  • 5g bunch of thyme - leaves picked
  • 1 lime
  • 1 tbsp sugar

Lovely meal. Had never heard of a pholourie before but they were delightful with the apple chutney and tamarind sauce. Such a yummy meal! The spices in the base of the cheesecake tasted amazing too.

Everything looks scrumptious and we're glad you enjoyed the pholourie- we love trying new delicious food from around the globe! The marble crockery is so beautiful too, wonderful presentation!

Loved this curry! With the slight alterations of diced chicken and sweet potato. I'm new to cooking with thyme but it added a lovely flavour, and followed by the hit of the chilli made every mouthful like a Trini party!!
