Beef Rendang is a delicious Thai curry. It is one of our favourites. It is easy to make and we have not only tried it with beef but also with goat. It is a curry which really benefits from slow cooking after the initial burst of heat. The longer you cook it the more intense and rounded the flavours become. And the more succulent and melt in the mouth the meat is. It is also easy to prepare and can be simply tempered to taste by adding slightly more coconut milk and/or sugar.
