Bombay Mix Spices

Bombay Mix is one of the most addictive and delicious snacks around, and it’s really easy to make a simple version yourself using everyday ingredients. This special Christmas edition is made with pistachio nuts, dried cranberries and a hint of cinnamon to give it that festive flavour!
BOMBAY MIX SPICES (1 portion = 1 tbsp): cumin, brown MUSTARD, nigella, turmeric, coriander, cinnamon, black pepper, green cardamon, fenugreek, ginger, coriander leaf, cloves, chilli, black cardamon, fennel

Christmas Bombay Mix Recipe:
PREP 5 mins
COOK 10 mins
HEAT 2
Serves 4 as a snack
You Need:
100g mixture of pistachio and cashew nuts (roasted and salted are fine)
15g dried instant noodles (eg Super Noodles without any seasoning mix on them) - broken into small pieces
15g dried cranberries or raisins
15g Rice Krispies or puffed rice
10g split red lentils
1 ½ tsp sugar
1 portion of BOMBAY MIX SPICES
Method:
Toast the nuts and red lentils in a wide, dry pan on a high heat for 5 minutes or until the lentils and nuts are slightly darker in colour, stirring continuously (everything needs to be kept moving or it will catch, particularly towards the end of cooking!). Remove from the pan and leave to one side
Add the sugar and 1 tbsp oil to the pan then carefully stir together for 30 seconds or until the sugar has completely dissolved (be very careful as the pan will be extremely hot!)
Take off the heat and stir in the toasted nut mixture, instant noodles, Rice Krispies, dried cranberries, BOMBAY MIX SPICES and ¼ tsp salt then put back on the heat and stir continuously for 1 minute or until everything is toasted, golden-brown in colour and evenly coated in the spice mix
Leave to cool to room temperature before eating (be careful as the mix will be extremely hot!)
