Bonfire Chutney Blend
- A delicious sweet, smoky and slightly spicy tomato chutney!
- Ingredients: Smoked paprika, chipotle chilli, paprika, red bell pepper flakes, green bell pepper flakes, MUSTARD, nigella, fennel, cumin, coriander, fenugreek, garlic, chilli, oregano, bay, ajowan, ginger, CELERY, curry leaf.

This month we've got a special spice blend to make a sweet, smoky and slightly spicy tomato chutney. It's a great accompaniment to any savoury dishes you might enjoy at this time of year, and works equally well with grilled sausages, as a condiment in a sandwich, or on the side of a curry.
BONFIRE CHUTNEY BLEND (1 portion = 2 tbsp ): Ingredients: smoked paprika, chipotle chilli, paprika, red bell pepper flakes, green bell pepper flakes, MUSTARD, nigella, fennel, cumin, coriander, fenugreek, garlic, chilli, oregano, bay, ajowan, ginger, CELERY, curry leaf. May contain SESAME. Allergens are listed in CAPITALS
Bonfire Chutney Recipe:
PREP 10 mins
COOK 40 mins
HEAT 3
SERVES 4 as a condiment
You Need:
6 tomatoes - roughly chopped
50g mixture of dried fruit (eg dates, raisins, sultanas etc) - cut into small pieces if large
2 tbsp vinegar (white wine or cider vinegar is best)
2 tbsp sugar
Method:
Blend the tomatoes with the dried fruit, vinegar, sugar, 50ml water and ¾ tsp salt to a smoothish puree
Cook the puree with 1 tbsp oil and the BONFIRE CHUTNEY BLEND, stirring regularly, for 30 minutes or until all of the liquid has evaporated and a spoon stirred through the centre leaves a trail for a couple of seconds

We all liked this a lot; we had it will sausage and chips, and in a cheese sandwich. However, the addition of the 50 ml is completely unnecessary and just evaporates over anyway, just adding to the cooking time and expending approximately 150 W.hrs of heat needlessly.
This chutney was an excellent addition to one of our Cracking Calendar Curries - the Navratan Korma. Smokey and saucy! YUMMM!

Thanks for your feedback about the addition of the water, too - we include this because we find that it helps with the blending of the mixture in the first step, especially if your blender isn't massively powerful. We'll take another look at the recipe, though, and see if we can tweak it to make the water optional!
