Here we’ve got a rich egg curry topped with crispy fried onion, a simple dhal, fantastic homemade samosas and a tamarind and green chilli dipping sauce.

Also on the side is one of Myanmar's favourite salads (which are known as thoke) - pieces of broken up samosa mixed with cucumber, tomato, radish and tomato and dressed with lime and toasted sesame seeds. This impressive spread is certain to wow your friends and family!

  • 300g floury potatoes
  • 3 medium onions
  • 4 cloves of garlic
  • Fresh ginger - finely chopped to make 1 tbsp
  • 200g green beans
  • 4 tomatoes
  • 100g radishes
  • ½ cucumber
  • 25g bunch of coriander
  • 1 lime
  • 6 eggs
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 200g red lentils
  • 250g plain flour plus extra for rolling
  • Rice for 4 to serve
  • Oil for frying (sunflower or vegetable oil are best)
