An essential blend to recreate the flavours of Cajun cooking made with the 'holy trinity' of Cajun cuisine, onion, celery and bell pepper. The technique of 'blackening' is used widely across the Deep South, where fish or meat is covered in Cajun spices and cooked on a high heat with butter to developed a 'blackened crust'.
USES: Mix with oil and use to marinate chicken, pork or fish.
