Hot pepper sauce is widely used in Caribbean cuisine as a cooking ingredient, as well as being the condiment of choice on any dining table. In this version, we're using habanero chilli for an incredibly delicious fruity fragrance (plus plenty of heat!), and some fresh lime juice for acidity. Add a dash to marinades for grilled chicken or pork, or use as a table sauce to liven up any meal!
HABANERO PEPPER SAUCE BLEND (1 portion = 2 tbsp): red bell pepper, chilli, habanero chilli, garlic
May contain CELERY, MUSTARD and SESAME.
Caribbean Habanero Pepper Sauce Recipe:
You Need:
1 pepper (any colour) - roughly chopped
1 lime
Method:
Simmer the pepper with the HABANERO PEPPER SAUCE BLEND and 150ml water in a covered pan for 10 minutes or until soft (reserving the cooking liquid)
Blend the pepper mix (including all the cooking liquid) with the juice of the lime and ½ tsp salt to a smoothish puree (adding an extra splash of water if necessary)
Strain the sauce to remove any large pieces then leave to cool. The sauce will keep for at least a week in a sealed container in the fridge
