Nigerian suya are a popular barbecued kebab featuring meat marinated in a dry rub of toasted peanuts and spices. Each street vendor will have their own special blend with a unique flavour, fragrance and texture - ours includes fruity habanero chilli, cayenne and a numbing hot pepper, as well as garlic, paprika and black pepper. It’s served with jollof rice, a dish found throughout West Africa and thought to be the origin of the Cajun dish jambalaya. For dessert we’ve got Nigeria’s answer to the doughnut known colloquially as puff puffs. We’ve flavoured these with a mixture of sweet spices - cinnamon, ginger, nutmeg and allspice - as well as that all-important hisbiscus, and they’re drizzled with a fruity hibiscus syrup to serve. Perfect with a scoop of vanilla ice cream!

  • 500g diced chicken (thighs are best) or use meat-free chicken style pieces for a veg version
  • 150g shelled prawns (any type) (optional) or use thinly sliced button mushrooms for a veg version
  • 1 red onion - finely chopped
  • 1 red pepper - finely chopped
  • ½ cucumber - peeled, deseeded and finely chopped
  • 400g spinach (fresh or frozen)
  • 1 lemon
  • 125ml milk (any type)
  • 75g peanuts (roasted and salted are fine)
  • 30g dry breadcrumbs or plain crackers
  • 1 tbsp tomato puree
  • 300g long grain or basmati rice
  • 90 sugar
  • 100g plain flour
  • 1 tsp dried yeast (½ a standard-size sachet)
  • Oil for frying (sunflower or vegetable oil is best)
  • Ice cream or crème fraîche to serve with dessert

Really loved this and lots of different flavours. Definitely recommend. Unfortunately didn’t do puffs as I have lost the recipe.

Really tasty. I'm so used to a "wet satay" sauce it was a good change to have the dry crumb version.

A reasonably simple straightforward recipe to follow, with very tasty results. Just the right amount of spiciness in the chicken, which stayed nice and moist. Even the spinach was good, and I'm not a fan. Will definitely be buying this one again.

It certainly looks delicious, Andrew - it's lovely to see so much variety in colour and texture on your plate. Yum!

So delicious! The chicken had a really nice texture and flavour. My kids (8 And 10) loved it too. They are far more adventurous than I was at their age!

Interesting flavours and easy to make. The spinach adds an unnecessary bitterness and we felt the meal didn’t hang together as well as other recipes.

Spinach stew (efo riro) is a popular Nigerian veg dish, but we're sorry that you weren't keen on this. This is a lovely family photo, though - and we're glad that you enjoyed the simplicity of the recipe and its unusual flavours!

The pepper sauce is HOT. The peanut mixture is HOT but with the spinach and rice it was ACE. A good deal of work but really worthwhile and enough for the 2 of us for another 2 days. Just so tasty.

The perfect meal to heat up a drizzly weekend! We're so glad the time spent preparing and cooking this dish was worthwhile - happy spicing!
