Ardabil is one of the most picturesque regions in Iran, with a melting pot of culinary influences from Azerbaijan, Turkey and Iran. Sule, our guest chef from the area who cooked with us through our connection with Bristol Refugee Rights, presented a few of her favourite dishes that are not only popular in Ardabil but also throughout the whole of Iran. We begin with some mushroom filled pastries known as ghotab, served here with a rich tomato sauce. Next, marinated grilled lamb with saffron rice, yogurt sauce and a simple salad. Finally for dessert, Iran’s answer to rice pudding, sholezard - subtly flavoured with cinnamon and rose.

Lamb Spices: turmeric, black pepper, parsley, smoked paprika, garlic, sumac
Ghotab Blend: Kashmiri chilli, black pepper, ginger, turmeric, garlic, green bell pepper, red bell pepper, parsley
Saffron Blend: saffron, turmeric
Sholezard Topping: cinnamon, rose
Salad Blend: mint, garlic, black pepper, sumac
Ghotab Sauce Spices: black pepper, Kashmiri chilli, turmeric

Shopping List
  • 4 lamb chops or 2 small chicken breasts, or use halloumi for a veg version
  • 1 large onion
  • 150g mushrooms (any type)
  • 10g bunch of parsley
  • 4 tomatoes
  • ½ cucumber
  • 1 lemon
  • 150g natural yogurt (full fat is best)
  • 20g butter
  • 1 egg yolk
  • 30g raisins or sultanas
  • 30g walnuts
  • 125g self-raising flour (plus extra for rolling)
  • 55g sugar
  • 200g basmati or long grain rice
  • Oil for frying (sunflower or vegetable oil is best)

Enjoyed every course. The starter was really lovely and I will definitely be making them again. The main worked well. I made using a chicken breast rather than lamb and it was lovely with the rice and salad. The dessert was a bit odd consistency wise but tasty enough.

We're really glad to hear that this meal went down a treat, and you loved your taste of Ardabil!

Probably the best Spice Box we've had. All 3 courses were wonderful but the lamb was absolutely amazing.

Great fun preparing It all with my wife. The combination of flavours was fantastic. We will definitely be re-ordering in the very near future.

Today we tried Chicken in place of Lamb but still had the Chelo KaBab egg Yolk and Sumac for real authentic Persian dinner. Plain Green Salad instead of Ardabil Salad as we had no salad spice left. I loved this but my dear wife preferred the lamb. Either way it was great.

Everything looks delicious- hats off to the chef!

We loved our Date Night in Ardabil, accompanied by prosecco cocktails whilst watching Strictly with our disco lights on. Our favourites were the Ghotab mushroom pastries. Thank you to all at The Spicery.

Grilled Marinated Lamb with Yogourt sauce and salad. I then enhanced the rice with raw egg yolk and sumac. I learnt that from my mother who had lived in Persia and loved Chelo kabob. Grilled lamb and rice etc... Very rich but perfect with the lamb. Try it one day - you will be converted!!!!

Yum that sounds delicious with the addition of the sumac- everything looks so fragrant and flavoursome!
