Ecuador has an amazing variety of ingredients, from tropical fruits to root vegetables, reflecting the extraordinary diversity of its geography and climate. We start this meal with an Ecuadorian coastal favourite, refreshing citrus-marinated prawn ceviche complemented with a deliciously fruity passion fruit chilli sauce called aji de maracuya.

For the main we head to the highlands with satisfying annatto marinated pork served with a whole variety of traditional accompaniments: potato cakes called llapingachos served with a peanut sauce, a citrusy salad called curtido and two ever-present ingredients in Ecuador, avocado and corn.

PORK GROUND SPICES: Cumin, black pepper, Mexican oregano, garlic, chilli, onion, coriander leaf
PRAWN SPICES: Coriander leaf, black pepper, red pepper, chilli, amchur
GARLIC SALT: Garlic, salt
CHILLI SAUCE BLEND: Bitter orange, chilli
SALSA DE MANI BLEND: Cumin, chilli, onion, coriander leaf
LLAPINGACHOS BLEND: Chives, onion, black pepper
CURTIDO SALAD BLEND: Black pepper, chilli, Mexican oregano, coriander leaf

Shopping List
  • 500g diced pork (or use diced chicken thighs)
  • 300g raw peeled prawns
  • 500g floury potatoes
  • 2 corn-on-the-cob
  • 2 large red onions
  • 1 yellow pepper
  • 4 tomatoes
  • 1 avocado (optional - to serve)
  • 10g bunch of coriander
  • 2 passion fruits
  • 2 limes
  • 1 small orange
  • 150ml milk (any type is fine)
  • 330ml bottle of lager or gluten free lager OR just use water
  • 2 tbsp plain flour or gluten free alternative
  • 3 tbsp peanut butter (any type is fine) or use whole salted peanuts
  • 100ml oil (sunflower or vegetable oil is best)

This was delicious. :) The prawn ceviche was so good we ate it before taking a photo. The main was great and the peanut sauce and passionfruit chilli sauce the best I have tasted.

Lovely 3 courses, great to try some different dishes and flavours! Ceviche starter and pork main full of flavour balanced well with accompaniments and followed by an interesting dessert offering some sweetness!

Really enjoyed this. Prawn ceviche very tasty, citrus with the prawns complimented by the passion fruit chilli sauce. Then the main, everything made for each other - the llapingachos, so simple, so good. Very easy to put together, more of these please.

The Ceviche starter is fabulous! The passionfruit chilli sauce also goes well on the corn and avocado. The pork came out a touch dry - but was saved by the peanut sauce.
