In Ethiopia, injera - a type of fermented flatbread (a bit like a South Indian dosa) - is used as both the plate for all the different dishes in the meal as well as the cutlery for scooping everything up! Here we’ve got a selection of classic Ethiopian dishes (many cooked in a gently spiced butter called niter kebbeh) including a simple chicken stew known as t’ibs, an Ethiopian version of dhal called kik alicha, lightly cooked beetroot and shiro - a tomato sauce flavoured with a very fragrant spice mix known as berbere. On the side is a refreshing salad called timatim and a chilli sauce also made with berbere known as awaze.

Delicious. Fabulous flavours. We didn’t have any Nigella seeds for the cottage cheese dish, but everything else was absolutely fabulous. The Awaze sauce is quite spiky, ha ha.

This looks like a fabulous feast, Ian - and beautifully presented! We're so sorry if the Nigella Seeds were missing from your spicebox and hope this didn't impact on your enjoyment of the meal too much.

My daughter and I loved this Ethiopian kit. I was lucky enough to live in East Africa for a few years and I was impressed at how close the Injera came to the "real thing". Overall a great kit, making varied and tasty dishes from simple ingredients. I will buy it again when you have more stock.

Sublime. Each individual dish comes together perfectly once put together on the Ethiopian injera, creating an explosion of amazing flavours and spices. Awaze sauce claimed the trophy for ‘Best dish on the table’.
