In Ethiopia, injera - a type of fermented flatbread (a bit like a South Indian dosa) - is used as both the plate for all the different dishes in the meal as well as the cutlery for scooping everything up! Here we’ve got a selection of classic Ethiopian dishes (many cooked in a gently spiced butter called niter kebbeh) including a simple chicken stew known as t’ibs, an Ethiopian version of dhal called kik alicha, lightly cooked beetroot and shiro - a tomato sauce flavoured with a very fragrant spice mix known as berbere. On the side is a refreshing salad called timatim and a chilli sauce also made with berbere known as awaze.
