Fattoush Blend

Fattoush is a Middle Eastern garden salad given a bit more substance by the addition of toasted or fried pieces of flatbread. The tangy dressing is flavoured with lots of ground sumac, and together it makes a lovely light lunch on its own, or you could eat it as part of a mini mezze with some hummus, olives and flatbreads.
FATTOUSH BLEND (1 portion = 2 tbsp): sumac, mint, oregano, black pepper, allspice, mild chilli flakes, oil, salt, Urfa chilli, oil, salt, red bell pepper

Fattoush Recipe:
You Need:
½ a cucumber - halved, deseeded and cut into bite-sized pieces
200g cherry tomatoes - halved
200g radishes - thinly sliced
25g bunch of parsley - leaves picked
100g pitted olives (optional)
2 tbsp vinegar (white wine or cider vinegar is best)
3 pitta breads
100ml good quality olive oil
Method:
Preheat the grill
Split the pitta breads in half then drizzle generously with olive oil and sprinkle with a pinch of salt. Grill until thoroughly crisp and dry, then break into small bite-size pieces
Mix the vinegar, 75ml olive oil, FATTOUSH BLEND and ¼ tsp salt to make the dressing
Mix the lettuce, cucumber, tomatoes, radishes, parsley, olives (if using) and crispy pitta bread with the dressing
