The origin of the Chinese 'five spice' blend is shrouded in mystery but it is believed the Chinese were trying to create a ‘Wonder Powder’ which would consist of all five flavour groups: sour, bitter, sweet, umami and salty. A delicious blend of earthy spices such as cloves, cinnamon and star anise form a lip-licking combination of tastes which transform any meal into a traditional Chinese feast. In many ways the Chinese conquered this successfully - despite the fact that the origins of the powder may be lost, this magnificent blend has stood the test of time.
USES: This robust blend is not only useful in weeknight stir fry's and sprinkled on steamed vegetable sides but also a brilliant match with poultry. For a seasonal dish which makes the most of this wonder-blend, try using five spice alongside honey in your usual baked chicken blend for golden drumsticks and wings with zing.
