PIE JELLY SPICES: Bay, black pepper, coriander

PIE FILLING SPICES: Sage, thyme, black pepper, white pepper, mace, Cayenne pepper

NUTMEG.

PICCALILLI SPICES: Chilli powder, turmeric, mustard, paprika, fenugreek, toasted mustard, asafoetida

CHUTNEY SPICES: bay, ginger, cassia, cinnamon, mace, cloves, allspice, cayenne, coriander

GRAIN MUSTARD BLEND: brown mustard, mustard

BEETROOT SPICES: toasted caraway, black pepper

500g pork mince (higher fat content (15-20%) is best!)

400g pork, any type (shoulder, belly, leg etc) 

200g streaky bacon 

½ medium cauliflower 

75g green beans

1 large onion 

3 beetroot (about 250g)

Celery sticks or little gem lettuce to serve

4 eating apples 

150g lard 

175ml milk (any type is fine)

4 eggs

200g full fat natural yogurt (not Greek yogurt or set yogurt)

Strong cheddar cheese to serve (optional)

840g plain flour plus extra for rolling

1 tsp bicarbonate of soda

2 sheets of leaf gelatine

1 chicken stock cube

170ml vinegar (white wine or cider vinegar is fine)

110g soft light brown sugar
