The kathi roll, which hails from Kolkata (formerly Calcutta) in Bengal, consists of an Indian bread on which a thin omelette is cooked, then the whole thing is filled and rolled up like a large fajita. With a significant Chinese population, Kolkata is known for its Chinese-inspired Indian dishes, so we've filled our kathi roll with some big Chinese flavours! Homemade chive parathas are stuffed with sticky Sichuan pepper and chilli chicken, a hoisin flavoured tamarind sauce, a fiery chilli sauce and a turmeric and nigella raita. On the side we've got a smashed cucumber salad and a traditional Chinese stir-fried pepper and potato dish known as di san xian which we've freshened up in the style of an Indian chaat salad with lemon, tomato and coriander.

Absolutely delish dish. We love making these altogether and this went down a treat! Another great spicery kit!

It all looks delicious, Kerri - great job! It's lovely that you're able to enjoy cooking and eating these recipes together as a family!

Lovely spicy rolls, great combination. Flipping the paratha with the egg on sounds scary but actually went very easily. Kitchen carnage 4/5 White shirt carnage 5/5

Uh oh - a white shirt in the kitchen is always a recipe for disaster! We're really pleased to hear how much you enjoyed this meal, though!

Absolutely delicious recipe - as usual! It was definitely one I had to “trust the process” with. I couldn’t understand why I was putting egg on a flatbread…until I tried it! Just wow! The entire dish was a taste explosion from start to finish. Another great Saturday night in, thanks to The Spicery!

We're so glad you trusted the process, Jade - it looks amazing, and we're so happy to hear how much you enjoyed the finished dish!

Really nice, quite a lot of prep but easy to follow and delicious.

We really hope the time spent preparing and cooking this meal was worth it when you got to enjoy the flavours in the finished dish. It certainly looks delicious!

Very tasty and lots of fun cooking this together, although used pretty much all the pans and bowls in our kitchen.

It looks amazing, Cicely - we hope the flavours and fun were worth the washing up afterwards!

Totally delicious. We used soya chunks instead of chicken so vegetarian friendly

This all looks great, Iain - and nice work adapting it to make it veggie! Happy spicing!

We replaced the chicken with firm smoked tofu to make it veggie but it was delicious! We enjoyed cooking it and eating it

Great job adapting this dish to make it veggie - it certainly sounds delicious! Happy spicing!

Fun in the sun! Brilliant recipe - everyone loved the main dish and the breads and the sides - though I think the favourite favourite was the amazing Di San Xian Chaat Salad. So glad I ordered two boxes so we can do this again!

Wow what a view, looks like the perfect summer dinner!
