Jerk Chicken and Fry Bread
| Description | Busy streets throughout the Caribbean islands would not be the same without the smell of grilled jerk meat lingering in the air. We’ve tried to capture a bit of that Caribbean flavour here with our mouthwatering jerk chicken perched on top of delicious fry breads. You can’t have jerk without coleslaw, so we’re serving it on the side along with sweet mango ketchup and pickled peppers. To complete this food truck feast, we’ve also got roasted sweet potato fries and ‘festivals’ - fried dumplings that are so good, they taste like a festival in your mouth. |

I found this recipe difficult but it is my first one. There didn't seem to be any directions for what temp oil to fry in, so although the frybreads worked well I felt the festivals were undercooked inside. There needs to be more detail on what it should be like... the whole point is to experience new recipes but not knowing anything about how it should be cooked or served makes this really difficult. I liked the frybreads and the chicken. The pickled peppers were good too. I found the coleslaw vinegary, and the hot sauce was ridiculously hot so we didn't really use it. It made my eyes burn washing it down the sink and I normally don't mind spice. The festivals weren't very nice and seemed slightly soggy inside. I suspect they needed a slightly lower heat than the frybread really to cook properly. My mango ketchup was grainy even though I blended it for ages and I'm not sure why, but I didn't know what consistency it should have. There is one tiny picture of how it should all look and that's not enough. The sweet potato fries aren't even pictured but I've never managed to bake them without them being soggy, and despite extra crisping in the air fryer they were still a bit soggy and soft. It was an okay meal.

This recipe was a lot of work, but the winner were the festivals! Light, fluffy and the sweetcorn, spices and spring onions combined beautifully. Will definitely make these again.

Wow this was good! The fry bread was an amazing component. We didn't use 3cm of oil, just enough to cover the bottom of a pan. It worked fine and puffed up. Hot sauce is good and HOT for those who like to kick it up a notch!

This was so much fun to create. The jerk seasoning was so flavoursome but didn’t overpower the rest of the spicing. The hot sauce could be added for further heat. The festivals were so light but packed a lunch and the fry bread was very aromatic. Pickled peppers very so easy to do. The whole recipe was easy to follow, methodical and has informative instructions.

After seeing the amount of work involved with this, my boyfriend and I were skeptic whether it was worth it, but it most definitely was! Everything was amazing, but I’ve never tasted anything better than the Festivals

Rather than give a specific temperature for the oil as this would be difficult to measure, we advise that the oil is ready when a small piece of dough is dropped into it then sizzles and immediately floats to the surface.
