The original recipe consists of a flour tortilla stuffed with meat, beans and cheese, though today, the variations on fillings are seemingly endless! Here, the warming flavours of the classic North Indian dish keema matar work fantastically well with a smoky salsa made from Mexico’s favourite chilli, chipotle, along with a tangy tamarind chutney and our own unique take on guacamole in the form of a delicious avocado raita.

  • 500g lamb or beef mince, or use 300g veggie mince (results in the same volume when cooked)
  • 150g peas (fresh or frozen)
  • 1 large red onion
  • 5 cloves of garlic
  • Fresh ginger
  • 1 avocado
  • 6 tomatoes
  • ½ cucumber
  • 25g bunch of coriander
  • 1 lemon
  • 100g natural yogurt (full fat is best)
  • Grated cheese to serve (optional)
  • 2 tbsp tomato puree
  • 1 tbsp vinegar (white wine or cider vinegar is best)
  • 45g sugar
  • 4 wraps or soft tortillas
  • 200g basmati or long grain rice
