Kolhapur - a city in the south central part of India in the state of Maharashtra - is renowned for its spicy cuisine, and this delicious chicken curry is no exception. An integral part of the dish is the goda masala, a special blend of darkly toasted spices and coconut that creates a delicious savoury flavour. Each household in Kolhapur has its own secret blend with regards to which ingredients are used, proportions of the ingredients and the level of toasting.

  • Sesame Seeds: white SESAME
  • Goda Masala: coriander, cumin, white poppy, fennel, black pepper, cloves, star anise, green cardamon, cassia, fenugreek, chilli, Kashmiri chilli, yellow MUSTARD
  • Whole Chillies: Kashmiri chilli

Shopping List
  • 500g diced chicken (thighs are best) or 1 small cauliflower for a veg version
  • 1 medium red onion
  • 2 cloves of garlic
  • Fresh ginger
  • 1 lemon
  • 50g natural yogurt (full fat is best) or dairy-free alternative
  • 200ml full fat coconut milk
  • 20g desiccated coconut
  • 2 tbsp tomato puree
  • 300g basmati or standard long grain rice

This was a great curry , easy to make ,the smell when cooking was amazing and we really enjoyed the slightly different taste , as my partner does prefer milder curries we cut back on the chillies , only adding one , and served with a cucumber and tomato and onion raita and naan this was not far from being as good as our local take away .

Made this with cauliflower for a vegan version, really delicious but even better next day when the flavours have been allowed to develop some more.

The Spicery strikes again & hits the Bullseye. Minimum effort for maximum flavour. Different flavours in different parts of your mouth. As my Wife said “a multi dimensional tasting curry, that is better & tastier than any restaurant or take away she has tried , 5 ⭐️“
