Until recently, Korean food was something of a mystery to the western world, but it’s now on everyone’s list of ‘must eats’. The Korean chilli flake (gochugaru) appears in many of the dishes - it has a lovely, sweet and slightly smoky flavour with just a touch of heat. To begin, we’ve got kimchi pancakes served with two of Korea’s favourite dipping sauces, the first (known as ssamjang) is tangy and spicy, and the second (known as choganjang) is sweet, salty and gingery. For the main event we’ve got a comforting chicken stew served with sticky rice and a quick version of kimchi, the ubiquitous fermented cabbage dish.

  • 8 chicken thighs or drumsticks on the bone (or a mixture of the 2) - skin removed if you prefer, or use firm tofu cut into bite-size pieces for a veg version
  • 1 Chinese cabbage
  • 1 bunch of spring onions
  • 3 medium carrots
  • 1 large onion
  • Fresh ginger
  • 2 cloves of garlic
  • 4 eggs (any size)
  • 50g sugar
  • 75g rice flour (for a gluten-free version) or plain flour
  • 25g cornflour
  • 60ml vinegar (rice, white wine or cider vinegar is best)
  • 45ml soy sauce (any type) or gluten-free alternative
  • 300g Japanese sushi rice

Pancakes and sauces were amazing, but the chicken and carrot stew was bland. This is the first time I've been disappointed with a spicery meal. Please remove this from future subscriptions.

Loved this meal. A savory pancake (with a kind of Chinese cabbage and spring onion pickle plus a couple of sauces), followed by a chicken stew with suchi rice. All delicious! Tasty spices without being too hot - even the kids loved it.

Went down very well with the family even those who were looking very dubious when I was making the Kimchi and Pickles. Every little bit finished!

Many more interesting flavours than expected. The kimchi was so simple and delicious, despite not being able to get Chineses cabbage - we used basic cabbage. The chilli sauce was quick and delicious. We’d definitely make this again

Delicious Korean food - just like my Korean friend makes! I fermented the kimchi overnight on the radiator for a more authentic taste.
