Madras Curry with Lemon Raita
This is a classic Indian restaurant-style curry often made with chicken or lamb, although you can also use fish or prawns (just cook them for less time). The Madras curry originates from Madras (now called Chennai) in southern India and is characterised by its deep intense flavour and rich red colour which comes from a combination of dried whole and ground chillies.

- 1 onion

- 1 lemon
- 30g butter
- 150g natural yogurt (full fat is best)
- 400g tin of tomatoes or passata
- 1 tsp sugar
- Rice for 4 to serve
