It’s slightly fiery and tangy with a squeeze of lemon, and served here with a simple fresh and crunchy green veg thoran with lots of cooling coconut and cashew nuts.

  • Madras Garam Masala: cumin, fenugreek leaf, coriander, black cardamon, black pepper, green cardamon, ginger, cinnamon, cloves, mace, bay, nutmeg, chilli
  • Thoran Blend: brown MUSTARD, curry leaf, cumin, turmeric, Kashmiri chilli
  • Madras Curry Blend: Kashmiri chilli, chilli, coriander, cumin, turmeric, brown MUSTARD, cinnamon, green cardamon, curry leaf, tamarind (tamarind and cornstarch), fenugreek leaf

  • 500g diced chicken (thighs are best) or use 1 medium cauliflower - broken into large florets for a veg version
  • 500g mix of spring veg (e.g. spring onions, asparagus, tenderstem broccoli)
  • 1 onion
  • 2 cloves of garlic
  • 1 lemon
  • 30g butter
  • 400g tin of tomatoes
  • 3 tbsp desiccated coconut
  • A handful of cashew nuts (optional)
  • 1 tsp sugar
  • Rice and natural yogurt to serve
