Mahlab
Mahlab is the spice produced by the seed kernels of the Mahlab cherry tree. Mahlab is used to add a slightly bitter edge to sweet dishes, and its flavour is reminiscent of the cherry and almond flavour in Bakewell tarts. It is used primarily across the Middle East and in Greece, where it is traditionally used in Greek Easter cakes and Lebanese breads. It is also blended with honey, sesame and nuts in Egypt to form a paste which is eaten as a dessert, or as a snack with bread.

USES: Grind the kernals and add to spiced biscuits along with cinnamon and nutmeg. Try it in Christmas cakes or even in homemade custard!
