Yucatan state in the south of Mexico is renowned for the fresh and sour flavours of its local cuisine, and this seasoning aims to replicate that by using lots of fragrant Mexican oregano, bitter orange powder, a blend of mild Mexican chillies and ground annatto seeds for a spectacular colour but very mild, rich and deliciously tangy flavour. 

YUCATAN BBQ SEASONING (1 portion = 1 ½ tbsp): aji amarillo chilli, annatto, salt, Mexican oregano, bitter orange, allspice, pasilla chilli, chipotle chilli, ancho chilli, cayenne chilli, black pepper, paprika, CELERY, MUSTARD

Mexican Yucatan BBQ Seasoning Recipe:

You Need: 

  • 4 pork chops or chicken breasts, or use 4 large field mushrooms for a veg version
  • 1 clove of garlic - finely grated or crushed
  • 1 lime
  • Salad, sour cream and black beans or rice to serve

Method:

  1. Preheat the grill or preheat the oven to 200°C/gas mark 6
  2. Mix the garlic and juice of ½ the lime with 2 tbsp oil and the YUCATAN BBQ SEASONING to a coarse paste
  3. Mix the pork chops with the paste to fully coat
  4. Grill on a low-medium heat or bake on a foil-lined tray in the oven, turning occasionally, for 15 minutes or until the pork is cooked through and starting to char around the edges
  5. Serve with salad, sour cream and black beans or rice on the side, and the remaining ½ lime to squeeze over at the table
