Herbs and spices are integral to Persian cuisine, and they play a huge role in making it one of the most celebrated and aromatic cuisines in the world. This fabulous BBQ features succulent marinated chicken skewers subtly spiced with advieh, the Persian version of garam masala, along with juicy mince koobideh skewers flavoured with sumac.

On the side is fragrant saffron rice cooked with butter using a classic technique so that the base - a much fought-over delicacy called ‘tahdeeg’ - becomes crisp while the top steams. There’s also cucumber and yogurt ‘mast o khair’, a refreshing salad, a braised bean dish called ‘khoresht loobia’ and fresh coriander chutney.

JOOJEH SKEWER SPICES: Coriander, cumin, cardamon, Aleppo chilli, ginger, turmeric, black pepper, cinnamon, smoked garlic
KOOBIDEH SKEWER SPICES: Smoked garlic, onion, black pepper, turmeric, paprika, saffron, sumac
SAFFRON BLEND: Coriander, black pepper, cumin, saffron, turmeric
SUMAC.
KHORESHT SPICES: Black lime, garlic, fenugreek leaf, cumin, turmeric
WILD MINT BLEND: Wild mint, black pepper, garlic, lime, rose
SALAD BLEND: Sumac, black pepper, mint, parsley
CHUTNEY BLEND: Coriander leaf, green chilli, garlic

Shopping List
  • 500g minced beef or lamb
  • 600g diced chicken (thighs are best)
  • 2 onions
  • 200g green beans
  • 6 tomatoes
  • 2 cucumbers
  • 20g bunch of coriander
  • 1 lemon
  • ½ pomegranate - seeds only (about 100g prepared weight)
  • 250g full fat natural yogurt or Greek yogurt
  • 30g butter
  • 50g pistachios (or almonds) - roughly chopped
  • 300g basmati rice or standard long grain rice (not easy cook)
  • 1 tbsp tomato puree
  • Pitta breads for 6 to serve
