The train known as The Frontier Mail ran this route, and the journey time of 72 hours meant that plenty of provisions - including this delicious curry - would be dished out to first class customers! At the time, the British would eat this curry with a Scottish morning roll, but we’re serving it instead with some North Indian favourites: onion parathas, a refreshing salad, a simple cauliflower dish known as achari gobi and a fiery carrot pickle.

  • 500g diced lamb or mutton, or use whole button mushrooms for a veg version
  • 500g floury potatoes
  • 1 small cauliflower
  • 1 large carrot
  • 2 medium red onions
  • 5 cloves of garlic
  • Fresh ginger
  • 1-2 green chillies (optional)
  • 2 tomatoes
  • 1 lemon
  • 1 tbsp tomato puree
  • 200ml full fat coconut milk
  • 2 tbsp vinegar (white wine or cider vinegar is best)
  • 2 tsp sugar
  • 250g plain flour or bread flour (plus extra for rolling)
  • Rice to serve (optional)

Delicious! The curry smelled heavenly already when just cooking and tasted even better when it was finished. The paratha were lovely and I so enjoyed making them. The cauliflower was fantastic. The tomato salad and the spicy carrots really pulled this dish together. My well-travelled partner was all nostalgic and reminisced about his time in India. I was told that the leftovers were most delightful the next day, too.

What a delicious combo! My husband made the parathas and they were lip-smacking! The curry was tasty and the salad a nice refresher. And enough for lunch the next day!

Last xmas my sons girlfriend gave me a three month subscription to The Spicery, which meant I got three different curry night recipes. Last night they came home so I made the dishes from one of the recipe packs - it was railway curry with achari gobi, carrot pickle, salad and onion parathas, I also made cucumber and mint riata to go with it and for desert made a rhubarb and apple tart. Picture taken after we had started to tuck in. The smells and aromas were such that we couldn't wait to get started and the taste matched this. Spicy, but not in a blow your head off way, so full of flavours and tastes. Had great fun making.

Loved the Railway curry we used lamb, and the carrot pickle. Not so sure about the Achari Gobi. Added my own Ocra curry and onion bahjis. Lovely meal enjoyed by all

We loved this meal. The carrot pickle and spicy cauliflower dish went so well with the curry itself. We loved the onion parathas which were very easy to make and so perfect for the lovely rich sauce. Another excellent meal, thanks!

The flavors were wonderful. I appreciate the recipe steps provided for the entire meal, it made the timing of all the dishes much easier. This was my first “Spicery” meal, it was fun and I’m anticipating our next box!

The best bit was the carrot pickle, absolutely superb. The onion parathas were fun. Being a vegetarian I made the railway curry with squah and mushrooms. If I do it again Ill leave out the squag and do more mushrooms. Achari Gobi alittle underwhelming

Super yummy! Best curry we've ever made! Just the right amount of heat and oooodles of flavour. Easy to follow instructions. Would definitely make this again!

The first of our subscription, had this as a new year meal and loved it. We used broccoli instead of cauliflower for the achari Gobi but it was delicious.

This curry was very tasty and spicy. We loved the onion parathas and how easy they were to make! We didn’t do the achari gobi as we aren’t a fab of cauliflower but loved the rest of the dish.

Wonderful selection of spices, for the lamb-based curry, and side dishes. Gorgeous aromas when cooking, quite spicy when eating, especially the carrot pickle!
