- 1.5-2kg lamb shoulder
- 750g baby new potatoes
- 3 large carrots
- 500g mixture of spring veg (eg purple sprouting broccoli, asparagus, green beans etc)
- 4 tomatoes
- 2 large onions
- 4 cloves of garlic
- Fresh ginger
- 25g bunch of coriander
- 1 lemon
- 400g natural yogurt (full fat is best)
- 75g butter
- 50g raisins
- 100g ground almonds
- 250g ready-cooked beluga or puy lentils or cook your own
- 400g basmati or standard long grain rice
- 1 tsp sugar
