Sri Lankan Curry Blend
This simple curry is based on wattaka, a Sri Lankan dish of pumpkin in coconut milk, flavoured with cinnamon and mustard seeds - two spices key to the cooking of Sri Lanka. It’s a delicious, mild, sweet-scented curry and, with the extra greens in this recipe, makes a really satisfying and easy-to-cook autumnal dinner.

SRI LANKAN CURRY BLEND (1 portion = 2 tbsp): turmeric, coriander, cumin, paprika, cinnamon, chilli, brown MUSTARD, yellow MUSTARD, poppy seeds, fenugreek, cardamon, curry leaf. May contain CELERY and SESAME. Allergens are listed in CAPITALS
SRI LANKAN PUMPKIN CURRY Recipe:
PREP 30 mins
COOK 50 mins
HEAT 2
SERVES 4
You Need:
1 small pumpkin or squash (about 800g prepared weight) - peeled and cut into large bite-size pieces
200g spinach (fresh or frozen) or chard - cut into bite-size pieces if large
1 red onion - thinly sliced
3 cloves of garlic - finely chopped
Fresh ginger - finely chopped to make 1 tbsp
2 lemongrass stalks - bashed with a rolling pin then cut into 3cm lengths
1 lime
1 tsp sugar
400ml coconut milk (full-fat is best)
Rice, chutney or sambol to serve
Method:
Fry the onion in 3 tbsp oil for 5 minutes or until soft and translucent
Stir in the pumpkin, garlic, ginger, lemongrass, coconut milk, sugar, SRI LANKAN CURRY BLEND and 1 tsp salt then cover and simmer for 40 minutes or until the pumpkin is cooked through
Add the spinach and cook for 5 minutes or until soft and silky and the sauce is rich and thick
Stir in the juice of ½ the lime then serve with the rice, chutney or sambol and the remaining ½ lime cut into wedges to squeeze over at the table

Had this Blend saved over from a while ago and decided to use it as a sauce for some vegetables. Spicier than I imagined (unless I made it wrong!) but very lovely - a big fan of the coconut fragrance
