Texan Chilli with Pico de Gallo - BBE 01/23
Texan chilli is known as 'bowl o' red', and you might be forgiven for thinking that the red colour comes from the use of tomatoes - maybe not by Texans, though! There are fierce debates about the key ingredients - tomato is a definite no (the deep reddish-brown colour comes from the use of chillies instead) and even beans are controversial, although we think they make this rich, sweet and smoky dish even more delicious!

- Beef Marinade: yellow MUSTARD, smoked paprika, ancho chilli, garlic, chipotle chilli, paprika, onion, black pepper, thyme, CELERY
- Chilli Blend: ancho chilli, chipotle chilli, Mexican oregano, guajillo chilli, smoked paprika, cumin, pasilla chilli, green bell pepper, red bell pepper, jalapeno chilli, coriander leaf, annatto, epazote, paprika, thyme

- 500g diced beef
- 4 rashers of smoked bacon
- 3 red chillies
- 3 cloves of garlic
- 2 red onions
- 2 tomatoes
- 1 lime
- 2 tbsp sugar (dark brown is best)
- 2 tbsp vinegar (white wine or cider vinegar is best)
- 2 x 400g tins of pinto or borlotti beans
- Tortillas or wraps and sour cream to serve
- Large frying pan
- Kitchen foil
- Large lidded pan

Wasn't really bothered to try this as we've tried many different chilli recipes over the years and thought we had perfected our favourite version. This was better. Definitely the best chilli we have ever eaten!
This was such a delicious meal. A little worried it was going to be too spicy but it really wasn’t. A really nice Friday night treat.
