Thai Massaman Curry with Son-in-Law Eggs
| Description | Massaman curry contains a huge variety of different spices but, like most food in Thailand, it has a lovely balance so that nothing overwhelms. It’s an unusual curry by Thai standards as it uses several dried spices in addition to the traditional fragrant Thai ingredients of lime leaves, lemongrass and galangal. It’s served here with son-in-law eggs (a dish of fried hard-boiled eggs dressed with tangy tamarind sauce, fried shallots and fresh coriander), a hot chilli sauce known as nam prik, stir-fried pak choi, a refreshing cucumber salad and plain rice. |

We're pleased to hear that you enjoyed this meal, but sorry if you found it a bit laborious to cook. Our spiceboxes can be a bit time-consuming (and deep-frying is always a bit of a faff!), but they are intended to be a real event to both cook and eat, and we hope the meal tasted even more enjoyable knowing how much work you'd put into it!
