The stew is served with mashed squash, green beans, a fruity apple kuchela and the quintessential Trinidad lime pepper sauce. For dessert we’ve got Trini sweet bread, packed full of dried fruit and coconut and flavoured with cinnamon, ginger and nutmeg.

  • 500g diced beef, or use whole button mushrooms and 1 x 400g tin of chickpeas (drained) for a veg version
  • 1 small butternut squash, pumpkin or 750g sweet potatoes
  • 200g green beans
  • 1 large carrot
  • 2 large onions
  • 4 cloves of garlic
  • 1 yellow pepper
  • 4 tomatoes
  • 1 large eating apple or 1 small unripe mango
  • 1 lime
  • 140g butter
  • 2 eggs (any size)
  • 250g mixture of dried fruit (eg cherries, raisins, sultanas, citrus peel etc)
  • 50g desiccated coconut
  • 260g sugar (demerara is best)
  • 250g self-raising flour
  • Rice to serve (optional)

I can’t eat coconut so decided to make but with flour instead! Delicious warm with a cuppa. Afraid I couldn’t wait to sample after the stew.

Yum - this looks incredible! We would also need to sample a slice before the stew!

First review since we started about 10 years ago. Absolutely stunning, fabulous, delicious stew with accompanying sides and added a few popadoms for extras. Plenty left for easy tea tomorrow after work. Sweet bread also 5 out of 5, so good i passed it round neighbours whist still warm, they want the recipe! Only downside, went on shop for replacement and its out of stock - nooooooooo! Sorry forgot to take picture as we were so hungry :) Keep up the great work Steve and Trace

This is the easiest to make dish I've had from Spicery and each dish was full of big flavours. I didn't expect the stew to be so tangy either. My favourite recipe so far!

Loved it . So tasty . All the accompaniments were perfect for the dish . Had it for a Easter Sunday - very non traditional !

Wow this recipe was stunning. It was exciting putting ingredients together than we never would have thought to put together, but surprisingly worked well! Its opened my eyes to experimenting even more. Def making this dish again!

Hi not the best pic I'm afraid but we couldn't wait to try it. During lockdown trying a different cuisine saturday night to try and keep a special day. My son bought me a subscription to The Spicery as a Mother's day present and what a brilliant thoughtful gift. We loved it my son has travelled all over the world before covid and eaten lots of different dishes so its high praise that he said it was one of the interesting things he'd eaten for a long time. My daughter, who would call herself a baker, rather than a cook, made the wonderfully delicious feast for me for Mother’s Day! The lime pepper sauce had more spicy heat than was expected, but the stew was unbelievably flavourful and moist. Can’t wait to try another recipe.

Very tasty stew, not something we normally make so a welcome change. The lime pepper sauce was hot hot hot!

There’s a bit of prep work but once that is done, the whole process is quite easy. We enjoyed this meal as I’m not sure we have ever tried foods from this region before. The sides were all delicious!

Nice one, those green beans looks great! It's always fun to try something completely different, and we hope this has given you a taste for Caribbean cooking now!

Really delicious, all the elements worked beautifully together.

This meal looks marvellous, great shout washing it down with an ice- cold beer too, now we just need some Trini sunshine!

The macaroni was so good! And I loved how the lime-pepper sauce and the green beans brought a freshness that balanced the whole meal out. Only problem was our stew - not enough liquid so it caught a bit and then when we added more the seasoning seemed to get out if balance. Didn't really matter though!
