Star Anise Lemonade

Star Anise Lemonade

This month’s STAR ANISE LEMONADE BLEND sees star anise taking centre stage, enhanced with aromatics including lemongrass, lemon verbena and elderflower. Perfect for a sunny summer picnic!

  • Total Time: 15 minutes
  • Serves: 6

Ingredients

  • 2 lemons - zested and halved for juicing
  • 100g caster sugar
  • 1 litre cold fizzy water
  • Ice cubes and extra lemon to serve (optional)

Spices

  • 1 portion STAR ANISE LEMONADE BLEND (1 portion / 2 tbsp): Star anise, orange flowers, lemon verbena, chilli, cassia, cloves, elderflower, galangal, ginger, lemongrass

Method

  1. Boil 200ml of water with the sugar, the zest of 2 lemons and the STAR ANISE LEMONADE BLEND for 5 minutes or until the liquid has reduced by ½ and you have a thick syrup
  2. Stir the juice of 2 lemons into the syrup then strain this mixture into a large jug (discarding the spices and lemon zest)
  3. Top the strained syrup with the fizzy water
  4. Serve in glasses over ice and lemon slices
